Food History: Salmon Tartare

Steak Tartare is a dish made from finely chopped or minced raw meat or fish. It is often served with onions, capers and seasonings, sometimes with a raw egg yolk, and often on rye bread.

Our chef in Alto Mar turns the tartare into a totally new version. It is made out of smoked salmon and fresh organic salmon seasoned with soya sauce and ginger to give an amazing Asian twist. The soya sauce is infused with spring onion, ginger, fennel, chives, capers and lemon all delicately finely chopped. Topped with a rice paper deep fried and a sour cream underneath, all textures and aromas are around this spectacular creation.
